Apple Cinnamon Muffins (Gluten-Free)

** 1 1/2 c. Gluten-Free Flour Blend |
1/2 c. brown sugar |
2 tsp. baking powder |
1 tsp. ground cinnamon |
1/2 tsp. xanthan gum ( check your store's Natural Foods section) |
1/4 tsp. salt |
1/4 c. melted butter (or applesauce) |
2 eggs |
1/2 c. milk (or milk substitiute) |
1 apple, peeled and diced |

** Gluten-Free Flour Blend ingredients: |
6 cups Brown or White Rice Flour |
2 cups Potato Starch |
1 cup Tapioca Flour |
(whisk ingredients together, store room temp) |

** For 1 1/2 cup gluten-free flour blend: |
1/2 cup rice flour |
1/2 cup cornstarch |
1/2 cup tapioca starch/flour |
1 Tbsp potato flour |
Directions:
1. Combine flour blend, sugar, baking powder, cinnamon, xanthan and salt in a bowl.
2. In a large bowl, mix eggs, butter, (or applesauce), milk, and diced apple.
3. Stir in dry ingredients.
4. Spoon into oil sprayed muffin pan. Bake at 350° for 40-45 min. or until a toothpick inserted in the center comes out clean.
