Cajun Style Trout

4 slices thick cut bacon or peppered bacon, diced |
1 c. chopped sweet or yellow onion |
4 (8 to 12 oz.) Clear Springs Dressed whole trout |
2 tsp. blackened fish seasoning or Cajun seasoning blend |
2 Tbsp. chopped fresh parsley |
Directions:
1. Preheat oven to 350°F. Cook bacon in a large skillet over med. heat until crisp, stirring frequently. Use a slotted spoon to remove bacon pieces to a paper towel; set aside. Pour off all but 1 Tbsp. of the drippings. Add onion to skillet; cook, stirring occasionally, until onion is tender and golden brown, about 8 min. Remove from heat.
2. Remove heads and/or tails from trout if desired. Sprinkle seasonings over insides of trout. Stir bacon and parsley into onion in skillet; spoon mixture into trout cavities. Arrange trout on a foil-lined or greased shallow baking sheet. Bake 20 min. or until trout is cooked through (145°F internal temperature).
